I know the ethical investment question has been asked before but how
about a fund like Jupiter's Financial Opportunities Fund? I'd have
thought that funds like these aren't going to be involved in companies
that do animal testing, mess up the environment, etc. or am I
completely missing the point?

Possibly, in so far as the financial companies in which the fund invests
may very well be financing the companies you wish to avoid.
